Uncle Buck's Jerky

Hardware used:
Dehydrator (best) or Conventional oven.
Jerky Works Kit.

Season used:
NESCO’s Jerky Spice (Original) or http://www.nesco.com/ or Boulineau’s, and sometimes Wal-Mart when seasonal items are not out!

Also, for that extra kick, add 1 TBL of cayenne pepper per lb of meat!

Directions:
Mix 1 lb of ground lean meat (Beef, Bison, Venison) with 1 pack of Nesco’s Jerky Spice mix.

Using your hands, work the spice mix into lean meat in a bowl until season is mixed thoroughly. Then make golf ball size meatballs and place in a tray.



Setup a workspace using tin foil or wax paper. I find this works best because it will slide across the counter as you press out the jerky, making even slices whereas a plate would only make the jerky look like an accordion.



Using the Jerky gun included in the kit, place meat balls into the gun, close and tighten by pushing the ram forward until you see meat pushing out the press. Begin pressing out your strips of jerky (3 or 4 pulls work best). Use a knife to cut the ends from the jerky gun.



After pressing out 2 or 3 strips of jerky, transfer the strips over to the dehydrator tray using a long bladed knife. Once all the meat has been pressed out and placed into the dehydrator, grab yourself a beer or two and wait 2 hours while the dehydrator works at 145 degrees.



After 2 hours, remove each piece of jerky one at a time and press out any excess fat using a paper towel and folding over the jerky on the counter, then place it back into the tray.

Let the meat dehydrate for another 4 hour and check. If done, remove and let cool.

If you like that outback flavor, you can “Cold Smoke” the jerky which adds a lot of smoke flavor by inverting smoke from a grill over thru a chimney and into a box.

Shown below, I used a small amount of charcoal (8 Briskets) and a couple handfuls of Mesquite wood chips Take an empty paper towel tube and cut a hole about the same size into a small box which is filled with 3lbs of beef jerky.

The ideal here is: vent the smoke over without the heat, which passes thru the box full of jerky for about 10 mins. Then place box in the freezer for 10 min to prevent the jerky from cooking any further.

Ingrate needs to be taught lesson

A Muslim lawyer has launched an extraordinary rant against Christmas, branding the celebration 'evil'.

Hate preacher Anjem Choudary claimed the festival was the 'pathway to hell' and urged his followers to boycott it.

'In the world today many Muslims, especially those residing in Western countries, are exposed to the evil celebration Christmas,' he raged in a sermon broadcast on the internet.

'Many take part in the festival celebrations by having Christmas turkey dinners.

'Decorating the house, purchasing Christmas trees or having Christmas turkey meals are completely prohibited by Allah.

'Many still practise this corrupt celebration as a remembrance of the birth of Jesus.

His family lives on £25,000-a-year benefit handout while he has gained notoriety as a firebrand speaker lauded by extremist groups.

Wait, he's on welfare? I thought he was a lawyer.

In the past he has demanded the execution of the Pope, organised mass demonstrations against the publication of cartoons which allegedly insulted Mohammed and urged Muslims to have more babies to take over the UK. Excerpts - the rest here:

Duped again WOW a real shocker

NEW YORK -- The New York Times admitted Monday it published a fake letter purportedly from the mayor of Paris criticizing Caroline Kennedy's bid for a U.S. Senate seat as "appalling" and "not very democratic."

In a note posted Monday on its Web site, the Times said the letter signed by Paris Mayor Bertrand Delanoe was a fake and should not have been published because it violated the paper's standards and procedures for publishing signed letters.

"We have already expressed our regrets to Mr. Delanoe's office and we are now doing the same to you, our readers," the Times said.

News of the hoax was first reported by France-Amerique, which published its story on its Web site Monday.

Who buys that rag anyway, and I suppose we will be bailing them out at some time in the near future?

Being Annoying Now Illegal In Brighton

BRIGHTON, Mich. -- Since when did being annoying become a crime? Since Brighton City Council approved a public conduct code Monday night, which includes fining someone up to $500 for being annoying.
One section of the bill reads, "It shall be unlawful for a person to engage in a course of conduct or repeatedly commit acts that alarm or seriously annoy another person and that serve no legitimate purpose."
The bill also states it's unlawful for anyone to insult, accost, molest or otherwise annoy any person in public.
The ordinance was modeled after one in Royal Oak, where the Brighton police chief previously worked.
The Livingston Daily Press & Argus reported that two council members expressed concerns for the language of the ordinance, but voted for it anyway.
Brighton officials said the ordinance would be subjective and the call will be made by police officers.
The amended ordinance takes effect Jan. 17, 2009.

SAN FRANCISCO — A woman in the San Francisco Bay area was jumped by four men, taunted for being a lesbian, repeatedly raped and left naked outside an abandoned apartment building, authorities said Monday.

Detectives say the 28-year-old victim was attacked Dec. 13 after she got out of her car, which bore a rainbow gay pride sticker. The men, who ranged from their late teens to their 30s, made comments indicating they knew her sexual orientation, said Richmond police Lt. Mark Gagan.

"It just pushes it beyond fathomable," he said. "The level of trauma — physical and emotional — this victim has suffered is extreme."

Authorities are characterizing the attack as a hate crime but declined to reveal why they think the woman was singled out because of her sexual orientation. Gagan would say only that the victim lived openly with a female partner and had a rainbow flag sticker on her car. Yes, it's a hate crime ... because it's much worse to gang rape a lesbian than to gang rape a straight woman ... cuz everyone KNOWS she secretly loves it. This is great stuff. The Klown is a big proponent of prosecuting thought-crimes. I think I started feeling that way in about 1984. I never did like any of this ungood stuff, much less the doubleplusungood -- Newspisce?

The 45-minute attack began when one of the men approached the woman as she crossed the street, struck her with a blunt object, ordered her to disrobe and sexually assaulted her on the spot with the help of the other men.

When the group saw another person approaching, they forced the victim back into her car and took her to a burned-out apartment building, where she was raped again inside and outside the vehicle. The assailants took her wallet and drove off in her car. Officers found the car abandoned two days later.

The woman sought help from a nearby resident, and she was examined at a hospital. Although the victim said she did not know her attackers, detectives hope someone in the community knows them. One of the men went by the nickname "Blue" and another was called "Pato," according to authorities. More here:

Darnell L. Frazier, 25, did just that ... uh, well, he tried to do just that early Thursday on St. Paul's East Side.


According to the police report, an officer stopped two men walking in the street at Forest Street and Minnehaha Avenue. One was "evasive" about his identification, telling the officer he had never had a photo ID. He said his name was Darnell Lewis, spokesman Peter Panos said.

The officer, however, noticed that the man had "Frazier" tattooed on his neck.

Frazier was arrested on four misdemeanor warrants, including driving after license revocation, driving after suspension and no proof of insurance.

He also had at least two felony warrants for his arrest: a probation violation in Jackson County for bringing a stolen vehicle into Minnesota and a failure to appear in Hennepin County on a drug charge.

The 25-year-old St. Paul man is currently residing in the Ramsey County jail.

He has a lengthy history of felony convictions in addition to the warrants, including receiving stolen property, theft, and having dangerous weapon on school grounds.

Former Vice President Al Gore will host a "green" inaugural ball the night before President-elect Barack Obama takes the oath of office.

When excited youngsters became rowdy as they talked about Santa, the supply teacher blurted out: 'It's your parents who leave out presents on Christmas Day.'

Deranged scientist makes ridiculous claim

The sun’s magnetic field may have a significant impact on weather and climatic parameters in Australia and other countries in the northern and southern hemispheres. According to a study in Geographical Research, the droughts are related to the solar magnetic phases and not the greenhouse effect.

The study uses data from 1876 to the present to examine the correlation between solar cycles and the extreme rainfall in Australia.

It finds that the Southern Oscillation Index (SOI) – the basic tool for forecasting variations in global and oceanic patterns – and rainfall fluctuations recorded over the last decade are similar to those in 1914 -1924
.
Author Professor Robert G. V. Baker from the School of Environmental Studies, University of New England, Australia, says, “The interaction between the directionality in the Sun’s and Earth’s magnetic fields, the incidence of ultraviolet radiation over the tropical Pacific, and changes in sea surface temperatures with cloud cover – could all contribute to an explanation of substantial changes in the SOI from solar cycle fluctuations. If solar cycles continue to show relational values to climate patterns, there is the potential for more accurate forecasting through to 2010 and possibly beyond.”

Doesn’t this guy realize that he’s in direct contradiction of Goreian science. Everyone knows that this was settled when Al Gore came out with his slideshow. It’s not the sun that causes variations in the climate. It’s adding one molecule of carbon dioxide for every 100,000 molecules in the atmosphere every five years. Clearly that effect outweighs that big bright candle in the sun that nobody understands anyway. From here:

Minnesota canvassing board is a joke

The Canvassing Board overseeing the vote recount for Minnesota’s tightly contested U.S. Senate race isn’t quite done examining disputed ballots, but using their numbers the Minnesota Star Tribune issued a projection Saturday night that Al Franken will pick up 270 votes when the board is finished. Currently the board is determining voter intent in disputed ballots. If the projection proves correct, Franken will beat incumbent Sen. Norm Coleman by 78 votes.

Vote totals have changed a lot since Nov. 4, when Coleman led Franken by 725 votes. Correcting typos cut Coleman’s margin to 215, and a recount by all the counties reduced it further to 192.

Yet, the additional 270 votes picked up by Franken from the Canvassing Board’s decisions have been among the most controversial.

The vote pickup has occurred through two actions by the board — divining voter intent and determining what votes should be counted. While decisions to include missing or overlooked ballots have gotten the most attention, the process of determining intent has also been important in determining the outcome here.

The Canvassing Board faces a difficult task in divining voter intentions. It is very difficult to determine how a voter meant to vote simply by looking at what might be stray marks on the ballot. And whatever rules are adopted must be consistently used in evaluating all ballots.

Some board decisions on votes are exceedingly difficult to understand, and even watching the television coverage of their decisions this last week provided little additional insight. Here is an example where the Minnesota Canvassing Board claims the vote is clearly for Franken. Voters are supposed to fill in the small oval next to a candidate’s name to vote for that candidate. The board explains its decision as there being "No Dup" (presumably meaning that there was no duplicate ballot), but it is not clear how that would switch what looks like an obvious Coleman vote to a Franken vote.

You can also go here to see all the disputed ballots and how they're counting them if you want. Just keep clicking "next ballot." You might as well save yourself the trouble though. The Democrats are clearly stealing this election. Think about it.

Franken gained votes when the "typos" were corrected. Somehow, none of the "typos" gave the Republican any votes.

Franken gained votes when the counties "recounted" but the Republican did not.

Franken is gaining votes by the Canvassing board "divining" the voters' intent, but the Republican is not.
